new traditions from callananhats

A few years ago I decided to delist the Turkey dinner from my Christmas tradition. This childhood, over-indulgent dinner just left me feeling bloated and piggy. So I decided that caviar would be my new Christmas day tradition served somewhere between 1 and 3. Luck for me my brother works in Azerbaijani and so I get caviar as a gift each year. So of the way we have enjoyed this tradition is
A LA COQ
A LA RUSSE. The shells were pick up on the beach in Cape Town last December and made great vodka shot glasses.

A LA POLANAISE
A LA THIERRY. with poached eggs.

This year I decided to give my caviar brunch an American twist. Thanks to a wonderful recipe from Anne Rosenzweig circa 1985 which was reprinted in the new York Magazine Aug. 29, 2010.

A LA AMERICAN.
There corncakes with caviar are so delicious that I want to share the recipe, so here we g.
PULSE 2 CUPS OF FROZEN CORN KERNELS IN A FOOD PROCESSOR WITH 2 TBLS OF MILK TO A FINE TEXTURE.
ADD TO BOWL AND ADD 1/3 CUP OF MILK, FLOUR, CORN MEAL, AND 1/ CUP OF MELTED BUTTER. BLEND WELL. ADD 2 EGGS,1 YOLK, 3 TBLS CHOPPED CHIVES. SALT AND PEPPER TO TASTE.

USE A NONSTICK SKILLET WITH A LITTLE BUTTER AND ADD 1 1/2 TBLS OF MIX AT A TIME TO MAKE LITTLE PANCAKES.

FLIP AFTER ABOUT 1 1/2 MINUTES.

I GOT 19 GOLDEN DELICIOUS PANCAKES FROM THE MIX.  SERVED THEM NEXT TO STORE BOUGHT BLINIS. GUESTS DEVOURED THE CORNCAKES AND ONLY TASTED THE BLINIS WHEN THE CORNCAKES WERE GONE.
